Hand harvesting in small crates after an accurate selection in the vineyard. The temperature of the grapes is dropped to 8-10ºC, a light pressing follows, after which the free-run wine is separated and decanted through the process of natural sedimentation at low temperature. An aging period on the fine lees follows during 6 months at temperature controlled in stainless steel tanks. Later a second fermentation takes place inside the bottle with the aging on the yeasts: a part for 36 months, a second part will be aged for 50 months. The hand riddling process follows. At least three months in the bottle after the disgorgement, before the releasing on the market.

Fragrant scents of bread crust, with floral notes of broom and fruity hints of peach, pear, citrus fruits and Mediterranean scrub. Pleasant and creamy in the mounth, with a fruity return and almond sensations. The balanced acidity fills the palate with freshness, intensity and a long persistence.”
