Hand harvesting in small crates. After de-stemming and crushing, the grapes are macerated on the skins
at a temperature of 12°C, for about 3 hours. A light pressing follows, then the must is separated and delivered cold to the fermentation tank. At the conclusion of the fermentation process, the wine spends four months on the lees in temperature-controlled tanks, with weekly bâtonnages, and a further two months in bottle before release.
